My favorite homemade desserts are fast, simple and fruit based. I find a bowl filled with seasonal fruits a perfect ending to a meal. Other times I like to finish with a sweet that is still quick and easy, but perhaps a bit more elaborate. This recipe can be assembled ahead of time, refrigerated and then baked before serving, or baked ahead of time and then re-heated for 15-20 minutes. It’s also open to many options, depending on what’s available in your larder.
4 tart apples, peeled, cored, and cut into eighths
3 ripe but firm pears, peeled, cored and cut into eighths
1/4 C. raisins
3 T honey
3/4 tsp. cinnamon
1/2 tsp. nutmeg
3/4 C. apple juice
1/4 C. Vin Santo
1 tsp. lemon juice
Preheat oven to 375°F. Lightly oil or butter baking dish just large enough to comfortably hold the fruit.
Place the fruit in the baking dish with the raisins. Drizzle with the honey and sprinkle on the spices. Mix the apple juice with the Vin Santo and the lemon juice. If you don’t have apple juice or Vin Santo substitute a sweet or dry white or rose wine, and perhaps a bit more honey. Toss the fruit with the liquids. Although not necessary, you could top the fruit mixture with thin shavings of butter. Place in the oven and bake for 45 min- 1 hour, basting every 15 minutes; bake until the fruit is tender but not mushy. Timing will depending on the firmness of the fruit.
Remove from the oven and allow to cool for about 10 minutes. Serve hot or room temperature. This is delicious as is but if you want to be a bit more decadent choose one of the following optional toppings:
vanilla ice cream
sweetened mascarpone or ricotta cheese
